Gauge Make & Model Function & Purpose
IC Air and Water Temperatures Unknown manuf. (see My Favorite Vendors) High incoming air-charge temps are a leading contributor to detonation and pinging.  So, I take steps to monitor this temperature frequently.  I also monitor the overall effectiveness and efficiency of my WTA IC by taining a close watch on the water and air temps provided by these gauges.
Air/fuel Ratio Halmeter AF30 Air/fuel ratios are critically important on a turbocharged / supercharged engine.  One momentary lean condition at high rpm and under boost can unexpectedly and immediately destroy a piston, and perhaps crater an otherwise healthy engine.  Air/fuel ratio meters such as this are fine for monitoring ratios at cruise and under low boost levels.  But, they function with narrow-band o2 sensors which lack any sort of temperature compensation.  As a result, I rely less and less on this meter for accurate ratios as boost increases past 7 psi.

The orange switches on the IC gauges allow selection of inlet, outlet, and delta temps.  Very trick!
